Round 1 is a stalemate. The T-1000 can't be put down without weapons. I don't think that even Odo turning microscopic would affect it. (Odo could possibly affect the T-888 like this, since its CPU is in a distinct place.)

And Odo can't be killed without weapons.

Data is pretty sturdy himself, so though the T-1000 may throw him around plenty, Data would be fine. I assume that "no weapons" extends to the T-1000's blades. If it doesn't, then the T-1000 could likely disable Data by piercing him.

In Round 2, again, the T-1000 and Odo won't be affected by the weapons in the store, and for that matter, neither would Data or the T-888. Maybe a shotgun blast at point-blank range would affect the last two.

So, probably a stalemate again. If there's a time limit, then eventually Odo would need to rest. At that point, the T-1000 could try to destroy Odo's "bucket" (wherever Odo was resting), but if the fight was contained in the gun store, then Odo would be safe from destruction.
