I've been reading the Dark X-Men TPB and I was wondering whats the deal with X-Man and The Sentry? Were they some sorta team in Age of Apocalypse? I don't remember that... Or was he just trying to manipulate Sentry?

It was Nate using Sentry's weakness of his past against him more than likely. He's smarter and a better strategist than he's given credit. for. However Nate tells Norman after this clip that he just told him the truth so it is likely that like most characters there are gaps in their history where time and events are skipped ahead.
@The Myth. it's very possible. Even when you look at the monitors behind Osborne when he is giving the team the low down on Nate you see at least one or two moments you didn't see in the comics, like Nate fighting Sentinels I don't ever remember seeing. It's all too likely there is parts of history that just weren't written that they can just fill in the blanks of as they go.
