I was wondering since he always uses mjolnir, can he use most of his powers without mjolnir, such as superstrength, superspeed, flight, etc? And also would he be able to use the odin force and his magic without it? Would he have all weather and earth control?

This is where I think Marvel has gone wrong with Thor. He IS the God of Thunder and son of Gaea. He should be able to control any of his powers - weather manipulation, lightening, earth manipulation, etc - with or without the hammer. But, for some stupid reason, Marvel has many of his powers tied to the hammer. The hammer SHOULD be a powerful channeling and amplifying weapon, but that's not the way its been written.
Thor's current Marvel NOW! title is currently exploring this now. The younger version shows him without Mjolnir. So far, we saw that he has incredible strength and can control lightning without Mjolnir, but he was not able to fly.
The Hammer pretty much just focuses his natural abilities and grants him flight. Its actually more of a crutch for him if you think about it since using it keeps him from having to learn to control it on his own.

Young Thor battled the God Butcher and not only survived but hurt him so bad, that it caused the God Butcher to want to kill all Gods. That was not only a younger less experienced Thor, but a Mjolir-less Thor.

It's relevant because saying I'm the god of thunder then hitting someone with lightning is the equivalent of saying I'm the god of echos and hitting someone with a CD player.
@Jonny_Anonymous: Thor is most known as a thunder god and thunder gods always by default have power over lightning and storms. Thor is first and foremost a thunder god naturally. Thor's name in old Norse means "thunder" so really it's a given he'd reply with thunder.
It wouldn't make sense if the big "Kra-Koooomm" wasn't there. That was the thunder. I thought it was brilliant because you can hear it even with out reading the words. That is the sign of great art.

Thor is the Thunder God because it all comes from Norse Mythology, where Mjolnir could fly so fast that it became a lightning, and when it did hit the ground (or whatever it was thrown to) the sound produced was the thunder. So in Norse Mythology, Thor was the god who produced thunder, because Mjolnir was the lightning itself.
he's got plenty to go on even without the hammer. All the good stuff of course: class 100 strength, invulnerability, superhuman speed feats, etc. But he's still got total control of the weather, including lightning of course, can use a full body godblast, lightning manipulation from his body and some other stuff.
