I'm not sure. The way he came back after Fear Itself, made it seem like he can't truley die, or atleast can for a little bit, and can come back to life.
technically no, while Loki managed to get himself out of the cycle of rebirth during Siege, Thor should still be in it. he can 'die' during a period of Ragnarok but will be reborn in the next cycle, new body same soul.
Didn't he break the cycle of Ragnarok?
He broke the cycle of Ragnarok. Not sure if he can be killed seeing as Gorr basically impaled him a few times in issue #2 and while he was badly injured, he recovered completely obviously.
If Gorr can murder the gods of every other pantheon in the universe, he can certainly murder the god of thunder, who is no more or less immortal than they. Maybe more capable of delivering a grade-A ass-whuppin', but no more immortal.
He gets killed everytime, hell, he got killed when he was a teenage, and came back 1 issue after.
But let's pretend he can "die" , for drama sake.

So does Thor just regen or something? From being stabbed trough the chest etc.
He can regen from stuff like that, but he can also die from stuff like that. It is more like you need to be a certain power level befoer you can kill him, even though you do the same move as the other person, and thor can bring himself back to life.
