Ben Grimm, better known as the Thing, is the original quintessential tough-guy of the Marvel Universe. But, because of his transformation, he's also the tragic member of the Fantastic Four. Ben was an ace test-pilot until exposure to intense cosmic radiation mutated him into a rock-skinned monster with immense superhuman strength. Ben's exterior is much harder than stone which gives him a rather gruff disposition; but deep down, he has a heart of gold.

There's no point in focusing on that.
The reason The Thing became a zombie is because its a story about zombies.
There are far more insane examples, like Ghost Rider and Wolverine.
You have to not take it too seriously.
Ghost Rider could be explained some what. If his host, in the case of Marvel Zombies, Danny Ketch was bitten then he should still become infected. But that's implying that the magical healing factor the Rider has doesn't cure him.
That's a no brainer (ooooh a zombie punny!). Things hide while extremely durable is in fact penetrable. He can be jabbed, cut, and his epidermis torn off by characters with great strength levels. His mucous membranes are also unprotected. It's been awhile for me, and there is lot to that whole story, so they may have shown his infection on panel and I can't recall which issue. Otherwise it stated that many characters were bitten initially by Zombie Sentry. I'll come back to it if I recall if they showed exactly how (I'm almost certain they showed the Fantastic 4's infection, as Reed was a big plot point in the whole ordeal?) and no one else came with it yet.
