Mr. Sinister was trained to be an engineer? When did this happen? I thought he was a geneticist...

Because he's a biological engineer. That's how he makes clones

I realize he's a genetic engineer but his original occupation he was trained for would likely be referred to as geneticist, as the broad term of engineer would not apply to Sinister in many cases

Engineer is just being very broad. A Genetic Engineer is a more specific kind of Engineer.
