I don't think the idea is to destroy Fake Karakura or else the story would be complicated to write. Just like the plot in DBZ and Toriko needed earth to stay intact for the majority of the story to take place, if I were to down play Vegetas big bang attack because it couldn't destroy a continent, nothing would make sense. Soi Fons bankai should be of a stronger tier than Grand Rey Cero which can range from Island to country level depending on the size of Las Notches because it was able to take of half of a released Barragans head and weaker characters than him can no sold island to country level Grand Rey Ceros. Think about it, if we down play its potency then then nothing makes sense.
