Why kill the last man?

I haven't really read the series Y: the last man but the one thing that always sprout in my head. Why would they want to destroy the last man? Do women like extinction?

There were a number of rationales.  The most fleshed out one was a religious sect believed the extinction of man was god ordained and thus it was their mission to carry out the complete elimination of man. 
 
As a practical matter, just being a man does not enable you to avoid extinction... you can't sustainably repopulate by natural means with just a single male... but researching his immunity would be worthwhile... but irrelevant to most women (if I put someone in front of you and said their blood contained the fate of all humanity what could you really do about it?  You'd need resources, skill, knowledge, etc. to actually exploit that).  And in that respect, Y is not the last male just the last human.
