I am terribly biased so I gotta go with the Greybeards. They are skilled in the ancient Nord art of the Thu'um and are (no exageration) the most powerful (individually) characters in Skyrim. Their voice is so powerful that if you talk to any of them that is not Arngeir, the temple will shake when they just wisper "Dovakhin". And by the time the fifth game takes place, the Blades are but a shadow of their former self, even if Delphine can kill entire Thalmor groups on her own and Esbern is a powerful mage, the Greybeards just need to whisper to blow those two into peaces.
How would this fight fair if both groups were in their prime?
Well this changes perspective. During the Third Age, Blades were specialized into many areas (they were scholars, warriors, mages, spies, merchants and so forth) while the Greybears were focused only in mastering the power of Thu'um and little else. The Blades have the advantage of varying abilities while the Greybears relied solely in the Voice, and even then, they would risk defeat like their founder who had misused his power and suffered a terrible defeat. If the Blades were to attack, they have greater numbers as well, many of them would have been skilled mages that would overwhelm the Greybeards. That if they didn't served as distractions for assassins to sneak up and kill them while they are distracted.
With that said, I really hate the Blades and I like to leave on record that I will not kill Parthurnaax ever >_>
