I might be interested in doing this now. I have an idea for a story with Darth Verudan and his acolyte Darth Kiaixes. Is it ok if we do Jedi characters as well?
I would say that each of Vader's predecessors can either be viewed as thirds of Vader's final personality or counterparts to the leaders of the Jedi Order at the time. If you go with the later Tyranus is clearly a counterpart to yoda, as is Grievous to Mace Windu, or Maul to a young Obi Wan (which is why I believe his death was significant to Obi Wan's development as a Master Jedi). On the other hand, they can also be seen as Anakin's disciplined wisdom from the Jedi order (Dooku), his powerful hatred for humanity (Grievous), and his deep commitment to the Dark side (Maul). This could have been word much better but you get what I mean. Perhaps you should translate these symbols to your SWGOT group

Grevious was an idiot. He also really didn't have any characterization other than "bad guy".
I disagree. I feel more like he was simply extremely dedicated to his cause, to the point of insanity. Or maybe that was just his lack of humanity. He very much is what Anakin will become IMO. Much more developed and interesting than Maul, who was just a psycho with a double saber.
I think @cattlebattle is pretty accurate here (not the idiot thing, the one dimensional criticism). Other than a particular line in dialogue you quoted from the movie their isn't really that much evidence that Grievous cared for anyone other than himself in the series. If you look at the cannon portrayals of Maul outside of Episode I you'll find that his commitment to the dark side was irrefutable. Grievous' origins outside of the films only really attest to his will to fight; he prides himself as a warrior and mainly respects Dooku for training him. Other than his battle feats he doesn't really have anything else going for him. Neither of them are really explored in the prequels, leaving them to appear as stylish brutes.
