The Lightsaber is arguably is the most prominent weapon across the Galaxy being highly favored by Force users throughout the Eras of time,before we go deeper into actual Lightsaber-Crystal Color Meaning and Lightsaber Combat were going to briefly peer into the origins of Lightsabers( Mechanics) and it's Forerunner-"the Forcesaber".
According to the holocrons, the earliest Lightsabers were crude devices that
utilized an experimental "frozen blaster" technology to create an energy beam of fixed length."

Though these archetype "Lazer-swords" were woven into the Order's essence they were still in fact prototypes not well suited for battle or combat, and Jedi's continue to reline on swords and bladed weapons as these archaic Lightsabers were not refine for regular use in combat.However they continue to dabble in this new technology and around 15,000 BBY they redesign new portable high-energy blades;still these energy blades were unstable and could only be used for a brief duration before overheating.

Eventually these large cumbersome and very rarely used weapons were outdone by elegant and much more efficient Lightsabers-far from perfect however as these still archaic Lightsabers sufferer from energy shortages and consumption issues,as they still needed to be connected to belt-worn power packs;this limited the wielders movements and acrobatic ability as well as hindering the usage of Force powered and ranged Telekinetic Saber Combat. In spite of these Limitations and shortcomings they were highly favored because of their superior advantage granted in hand-to-hand combat especially so against Heavily armored foes.
This was said of these early Lightsabers:

Despite the deep connection with the Jedi\Je'daii Order it was the Dark Lords of the Sith Empire that were responsible for the Evolution of the "Modern" Lightsaber by replacing the belt-mounted packs with a Power Cell inside the hilt an internal Power source was discover the long ongoing-problem of energy shortages were solved.It appears the Sith were also responsible for the creation of "duel bladed lightsabers".Despite all of these compelling Advancements in Lightsaber technology the majority of Sith opted for Sith Swords shunning the "Jedi Lightsaber"
A Jedi Civil War
A Jedi Civil War was set ablaze when former fallen Jedi Reven and Malek were turned to the Dark Side and invaded the Jedi Order with the hope of Building their own Sith Empire,during the the war many Dark Jedi rallied to to Revan's cause.It's pretty interesting to note that Revan followed the tradition of the ancient Sith by utilizing a Red-color Crystal for his Lightsaber. Revan's follows upheld this tradition by forging Red-Hued Crystals for their Lightsabers;thus the the widespread belief of Red being the "color of the Dark Side" was strengthen. Ever since the red Lightsaber continued to be identified as a Mark of the Dark Side even thousands of years after the Fall of Revan.
Also noteworthy is that when the "Sacking of Coruscant" took place in about 3653 BBY-which led to the Cold war,during the time these events took place nearly all of the Sith warriors and inquisitors wielded Lightsabers instead of fighting with their more traditional Sith swords which at this point had been abandon in favor of Lightsabers. Again Red-Hued blades were the norm for Sith-further embellishing the Red Bladed Lightsaber as an emblem of the Sith Empire.
Lightsaber Mechanics & Construction
I will briefly touch on Lightsaber Mechanics-For most of this section I will quote verbatim the mechanics of a Lightsaber..because of my lack of knowledge in this area:

This was the "model" all Jedi Padawans were encourage to adopt,it could be said that the Lightsaber to the Jedi was a Talisman of sorts being intimately connected to their weapon thru the Force.the Lightsaber could be used as a mind focus. I should further explain what I mean: I always thought that the Lightsaber is a kind of talisman to the Jedi. A thing that helps them concentrate. The familiar feeling of the hilt on the palm, the buzzing sound as it should be ... I think these are all things that help the Jedi to feel comfortable, to reach inner balance so to speak.Some evidence for this can be seen by examining Nomi Sunrider's refusal to use a Lightsaber at the start of her Jedi training-and her Master Thon insisting she uses one; as a Lightsaber is not only a invaluable weapon but also greatly endows Force Battle Meditation and focus. When she later activates her Lightsaber she actually feels it boosting her Force Power.
The Republic Planet Illum serve as a valuable mine to Jedi(and to Sith) as it was the principle means to acquire natural-growing crystals."Toward the end of the Old Republic era, Ilum was the primary source of most crystals used for lightsabers; this dramatically limited the color range, as the crystals harvested from Ilum produce only blue and green blades."―Tionne Solusar
It should be noted(as mention above)that one of the reasons Jedi's usually had either a Blue or Green Lightsaber was due to the limited color-crystals at their disposal. A Jedi would travel to Ilum and seek a crystal that they felt deeply"connected" to,this crystal would then be used by the Jedi to craft a Lightsaber-thus the blade would truly become an extension of the Jedi.This balance would in turn help the Jedi to avoid distractions and to focus on his attuned Crystal.
Meaning Of Colors
casually people will tell you that clearly colors denote Affiliation with the Dark or Light Side(this being due to us being introduce to Sith Wielding Red Lightsabers while Jedi like Luke wielded Green&Blue:Red meaning Dark Side and Blue&Green meaning Lightside-well it's not exactly that clear-cut,you see not all Sith wielded a Red-Hued Lightsaber just as some Jedi Wielded non-"Lightsided" Colors such as Red-However generically it's correct that the color Red was a symbol of rage\blood and the Dark side.Emperor Palpatine favored the color Scarlet.
