Seeing as Zsasz doesn't have an uncountable amount of fights, I thought it would be nice to try and collect them here as I'm a bit of a fan. I won't have been able to find every one of his battles so if you've got any (I know I need his encounter with Batman in Cacophony and his scuffle with Damian in Batman and Robin) that would be a help. Also, thanks to @silent_bomber as I found a fair few scans from his profile.

Mr. Zsasz is a serial killer with no regard for human life. He carves a mark into his skin for every life he takes, slowly covering his entire body in scars.
Victor Zsasz's fights
You're missing the main, most impressive one which I have posted repeatedly -
Other than that you have all the major ones except Cacophony and the one where Damian beat him when he'd been blinded.
There is also a one-panel flashback of Harvey Dent punching Zsasz, and a short scuffle with Killer Croc.
Zsasz also led Nightwing into a trap shortly before the Last Arkham scan.

The Stephanie/Huntress/Batman isn't really a fight, just three people ganging up on him, I guess its useful as an stupidity feat or something though, in that it shows Zsasz trying to take on three martial artists simultaneously (one of which is Batman) lol.
In the fight Zsasz Vs Damian & Abuse note that Zsasz has a broken hand and has only just recovered from being knocked unconscious, maybe note in both those fights that Damian also has a sword whilst Zsasz only has a knife.
There's a lot more to the Detective Comics 816 encounter than is posted there.
Here's the details of the Croc fight in No Man's Land -
Zsasz has been admitted to Leslie's makeshift hospital due to something that happened (I believe) off panel. Zsasz is hurt bad, the guy he attacked is also brought in (a friend of Croc's) but dies, Leslie states that Zsasz will die if he doesn't get a transfusion.
Zsasz nearly kills some guy by instinct whilst he's still unconscious
Zsasz actually recovers way faster than anyone expects and goes to attack Leslie
Croc immediately turns up but the fight is interrupted by Batman, I've put all the panels of the fight we see together here.

Here is the 3rd Damian "fight"
Zsasz gets free from his cell and attacks White Knight for killing his brother, Damian hits Zsasz from behind with Batarangs and White Knight blinds Zsasz with his blinding light ability, Damian then proceeds to slash and punch Zsasz whilst he can't see.
EDIT: After three attempts at stacking these in the right order I'll just post the damn things separately
Here's the Cacophony Fight
I'd say this, and Knightfall are Zsasz's worst showings against Batman, though Zsasz does manage to slash and bite Robocop Batman.

I don't like it, I feel Zsasz is acting out of character (he's usually calmer and intense, not an overly-animated faux-religious nutbag).
I also don't like the artwork, and I'm not keen when Batman does stuff like reaching through walls.
Here Zsasz's Origin story if anyone interested, including his first kill and another mention of doing 16 hours of isometrics a day.
@silent_bomber: Eh, looking back through the scans you posted I guess you're right. Personally, I don't mind it when Batman does things like breaking concrete and the art isn't too bad but I prefer the Arkham depiction of him seeing as that's where I discovered him.
Urgggh, found another low showing for Zsasz in that same issue where Clayface was taken down by a heat-rang.
Friggin Catwoman
At this stage it looks like the worse of a fighter you are, the easier you will take down Zsasz.

Zsasz's speed, strength, and durability should all be too high for Catwoman IMO.
Unfortunately you get this a lot with "Batman Family" side titles, lots of inconsistencies. Clayface is the same way, in the main Batman titles he's usually unstoppable whilst when appearing in the side titles he develops new weaknesses every appearance.

@silent_bomber: I know, maybe if he was given a story arc in the New 52 then it might invite a few new lovers in. Zsasz is quite unique, you get all these villains wearing bright clothing and showing of their special powers but Vic brings has a realness to him because you can actually imagine people like him in real life.
