Does Bruce have any sort of control over the Hulk? What I mean is during a fight, can Bruce talk to Hulk from inside, tell him what or who to attack or is Bruce completely gone until Hulk calms down?

Well in WWH both the Bruce personality and Hulk personality made a compromise and fought as one being

I like how they did it in the Hulk (2008) movie, where Banner just targeted where Hulks rage went, kinda like a Hulk heat seeking missle of shorts.

I think it all depends on which incarnation of the Hulk we're talking about. Certain incarnations have a deep hatred of Banner (most of them, and usually the more savage/dumb ones do). The King Hulk and WWH personalities seemed to be more at peace with eachother, if not merged - wherein Banner and Hulk were working together toward the same goal - sometimes seeming that Banner was in control of the Hulk's power/body/personality.

Also - in the early issues of Hulk, Banner was nearly oblivious to what was going on during his time transformed into the Hulk. Even in the 2008 movie Banner makes mention of the fact that he doesn't remember what is going on when he's the Hulk, but he retains some bits and pieces here and there - but really distorted and confusing. He related it to some sort of hallucination trial that he and Betty partook in.
