They're not true Monastic orders, especially the Sith. Both Orders take an active role in political life. The Sith themselves are deeply ingrained in society; the Banite Sith, over a thousand years, embedded themselves into every single aspect of society, from entertainment to banking, and from criminal networks to government. The Jedi themselves are sworn protectors of the Galactic Republic, serving them and fighting in wars that would threaten the Republic.
Also, the Sith do not necessarily have a problem with sex. Not all Jedi have a problem with sex, either; many were married, many had children. Even during a time when physical attachment was forbidden, Ki-Adi-Mundi was allowed to take part in a polygamous marriage out of necessity for the sake of his species. Famed Jedi Master Nomi Sunrider was married to a Jedi Knight before she, herself, became a Jedi.
Jedi don't have a problem with death; the same is not true for Sith.

The film saga only represents an extremely small portion of the SW universe. Star Wars comics and novels stretch over a hundred years after the films and tens of thousands of years before them. The rules of the Jedi alter according to the times, and the film represented arguably the strictest due to it being their golden age. However, Sith are not monastic - the whole point of Sith philosophy is fulfilling your passions to the fullest. Many Sith had huge families and dynasties, just doing whatever they wanted. Restraint is viewed upon negatively among Sith.

You're limited to the movies, which only shows a tiny glimpse into Jedi lore.
Also, Qui-Gon was going to train Anakin and defy the Council. He was going to train Anakin, regardless of what the Council did. Because of Qui-Gon's ideals, Obi-Wan threatened to do the same.
The point is that Sith and Jedi are active in society; monks are not. They're not Monastic orders. In fact, just to back this up, Jedi and Sith were somewhat based on Samurai, not just monks. Vader's mask was partially inspired by the helm of a Samurai. Star Wars itself is based on the Samurai movie, "Hidden Fortress."

1. Depends on the circumstances. Many Jedi Knights have colors that distinguish their area of experience (a lot of people who focused on lightsaaber dueling above Force powers had blue, like Obi-Wan). Other times it has to do with when and how their lightsaber was created. The process varies.
2. Yes. That is 3 separate videos edited together. Those videos served as prequels to Star Wars: The Old Republic.

That's for Sith, not Jedi. Many Jedi have had multiple apprentices, Yoda included.
Sith practice the Rule of Two, which follows the succession of power. Apprentice defeats master, that apprentice is defeated by the next, etc. So basically, each new master is stronger than the last. It continued that way until Palpatine, who was the most powerful Sith of all time.
It is a difficult choice as the Trek universe is mostly utopian, so being a starfleet officer woukd be a far safer option. Status is unencumbered by financial position you specialise and do what you want. Ships travel far corners of the universe, replicators create anything you want. Federation space is relatively safe (I am not counting the movie reboots). To be honest being a starfleet officer allows you to "Live long and prosper."
Being a Jedi or Sith means the opposite. Fighting, betrayal. Rinse and repeat. But hey you are goin to have a lot of fun doing it. I would be the proverbial grey jedi. I do what I want and to hell with the Jedis ludicrous rules. And to hell with the Siths all or nothing approach to life. All you do is explode and burn out, which is basically what the Sith are.
I strongly support most of the sith way but also the Jedi I sympathies with sith but do not agree with them compleatly

Not really. Jedi prefer their lightsaber blades to evoke the colors of nature i.e. blue, yellow, green
Jedi Guardians (duelists/fighters) tend to use blue, Consulars (Jedi who don't use their lightsabers often and prefer to heal, or study/teach history, archaeology etc.) often use green, and Sentinels (basically a mix of the two aforementioned Jedi, with some sort of focus on various practical applications) tend to use yellow, but there's been mixings of colors in every generation of Jedi.
I cant believe anyone would pick Starfleet over one who controls The Force.....
You don't and can't "control the Force". In fact, as a Jedi, you don't "control" (as in command, or have authority over) anything, since that goes against their code and tradition.
