I'd say either Darth Plagueis or Yoda just to be different. I know folks overrate Yoda.
What Star Wars character would you like as your Master?
Jedi Master: Kyp Durron. Sure his earlier methods would have me skirting closely to the darkside, but I just love his hipster attitude. Durron is like Qui-Gon but is much more interesting and powerful.
Sith Master: Darth Zannah. Well, she isn't excatly the most powerful, in fact, she isn't even close. But with her as my Sith master, I will be the most effective with Zannah, because I will be working towards a goal I will never be able to recieve; her affection.
Overall: Abeloth. What can I say, she is my future wife.
I'm not even going to pretend like I would EVER have a Jedi master...My true master would be Darth Malgus. We share very similar goals, personalities and ideologies, and I think we could be very good friends. Would have no problems supporting his grand scheme of a New Sith Empire of tolerance.
Jedi Master: Plo Koon

If I was only a Jedi, I would go with Qui-Gon. I'm fairly maverick, so I'd choose him for the type of person he is, which is a mirror of mine. I could also go for Obi-Wan (especially old Ben), Luke, Yoda, An'ya Kuro, Meetra Surik, Revan, Fae Coven, Satele Shan etc, not just because I like them, but because of their character which could match mine to some degree, and in my opinion, they are effective teachers.
Sith - Traya. Overall, I would probably prefer Kreia. I know they're the same people, but I just enjoy her philosophical attitudes. The fantasy and philosophy of SW was perhaps the most attractive portions of it, to me, not the science or technology. That, and I would prefer to be more of a Force user than a duelist. I would like exposure to combat, of course, which Kreia would give me, but her attitude to character and the Force would be the most important factors. I might not choose Kreia as an overall master because she does dip more towards the dark side than anything else. I could also choose Vergere as a Sith Master, for similar reasons to Kreia. Possibly even Lumiya. Plagueis could also be an option. Probably not Tenebrous, though. I think some of the unexplored characters have potential to be the ones I am looking for - I am aiming at Darths Rivan and Guile, for example.
The reason I'm opting for these more obscure characters is because I wouldn't want Palpatine to be my master because I wouldn't learn the lessons I want, and Maul, Tyranus or Vader would not be a good teacher to me because in many ways, they are very much ignorant characters with respects to the Force as a whole. They have their ups, but also their downs. Inside, they're really just ruined people, and they can't give me what I would want. It is for the same reason that I would avoid picking somebody like Krayt or Malak or Nihilus or Sion or any such blind or ruined character. Again, I'm fairly maverick, and I despise the way Maul, Tyranus, Vader or Palpatine teach - they have no real lessons to teach, in my opinion. My philosophical nature simply isn't compatible with theirs, although Palpatine just uses his "apprentices" as tools, and the others can't teach, in my opinion. At all.

I have to say I'm surprised by how many people are selecting Palpatine as a Sith master. Of course, this is a matter of opinion, but Palpatine doesn't plan to be succeeded. He just uses his apprentices and once they outgrow their worth they die. And the training itself is harsh to begin with, with few lessons truly taught (aside from the misconceived typical Sith lessons of strength and pain). You then become a personal weapon, a tool, possibly without your knowing or consent, and you'll live your life as a broken man or woman inside a shell that looks tough, but really isn't. Sidious has never intended for any true apprentices as he expired the Rule of Two and replaced it with his Rule of One. He intends to become eternity and infinity; to become God, essentially, and all he does is aim for omnipotence whilst using his servants to cover up other minor issues that he doesn't bother with.

I'm not well-versed in the Star Wars universe but that Jamaican Jedi seems cool to train with.
Jedi- Yoda. Yoda is one of the most powerful and wisest characters in all of Star Wars and his knowledge of the Force is amazing.
Sith- Dooku or Darth Plagueis or Darth Bane. I like them for their unique ways. They aren't like most Sith.

Other - Ventress (if I got to bang). If not, Talzin.
