Naruto, Naruto: Shippuden, Samurai Shamploo is a short and good series, Wolf's Rain was good too. Any of these are good. Samurai Champloo was made by the same people that made Cowboy Bebop I believe.

These don't have hundreds of episodes to catch up, and some of the best out there (as far as I have seen)
Full Metal Alchemist: Brotherhood. Not to be confused with just full metal alchemist. Both adapt the same manga, albeit with slight changes. Brotherhood is better imo.
Death note. I'd say 'monster' is similar, but better although older.

These are pretty cool Animé series. ^^
You may like Cowboy Bebop because of the obvious western influence integrated in the anime, but its a start.
As for recommendation I suggest:
- Outlaw Star
- Macross Plus (By the same Director as Bebop but you may need knowledge on the lore)
- Death Note
- Ninja Scroll
- Ghost in the Shell

they are far more comparable to Bebop than most of the people recommending shonen stuff, which I'm pretty sure you won't like.
anything by Studio Ghibli is also excellent. Its Hayao Miyazaki's company and they pretty much dominate the industry in quality (they only do movies though)
If you want an anime with damn good animation with great fight scenes and is current, I'd recommend "Fate/Stay Night: Unlimited Blade Works" (2014 version)

I started into anime too, watched the whole series of Death Note and understood that the anime as a medium could have more potential than any other, if realized properly.
Death Note led to Future Diary, which I gave up, the cerebral drop was too much to cope with. I am currently watching Steins Gate, but am loosing interest because the attention focus shifted.
Anyway Death Note is probably the best for beginners for anime fans and probably the best thing I have ever watched. (As far as I can recall anyway).
I just started getting into Anime myself, I've watched Bleach and am almost caught up on Naruto. I love Samurai Champloo, it was effin deep and awesome. Besides DB/DBZ/DBGT those are the only three I've watched.

Went through a rough patch...partly why I was so inactive a few months ago. But I'm good now.

@frozen: nice man. Bebop caught me some time ago as well. I have a few suggestions simply based off of what I personally have liked. The ever popular (and very different from Bebop) choices of Bleach and Inuyasha are solid picks. Some others here have recommended Full Metal Alchemist (and FMA: Brotherhood) which I will as well. I am also a fan of the older stuff such as Ronin Warriors and Tranzor Z (or Mazinger Z) but I fear those may not be your fancy, but you never know....

These are the Anime you need to watch. The new stuff is 50/50, mostly crap in my opinion.

Any specific genre you're looking for? If you want stuff like Bebop I recommend Samurai Champloo(as many have suggested it is a fantastic anime that's greatly influenced by underground hip-hop culture), Lupin the 3rd(this one is very much like Bebop and has held up extremely well over the past 40 odd years. Definite classic), and Mitchiko to Hatchin(Another anime with Shinichiro Watanabe's classic style. This one's unique in that it's set in Brazil, and the artwork and music paint the South American atmosphere extremely well).
