I was thinking about this, and after watching that awful omelet scene, I came to an enlightening conclusion: the reason that they made this change was literally narrative laziness!
Think about it: all Whedon can write is snark, and not even intelligently. Thus, he needed a reason for why Ultron, a character who should sound (in voice, dialogue, and characterization) more like Shockwave and Soundwave from Transformers, would speak with the same generic snark that Iron Man speaks with.
Literally, listen to Ultron's awful dialogue, and tell me that it wouldn't sound right at home coming out of RDJ's mouth!
