To make it look intimidating. And without the name we wouldn't know the difference between the attacks. Every ki blast in dbz look identical without the colored copy. Natsu would look like a guy with wings instead of a dragon.

It's an ancient idea that there is power in names. So knowing or stating an attack's name would amplify said attack's strength (this is explicitly stated in some anime like Bleach, but is an unwritten rule in others.) It's also for the audience and kids watching.
