What do you consider to be classic Dr. Strange's power level?

Depends on the situation. At max potential IIRC he was a match for LT.

Dormammu's superiority over Strange is pretty much proven, so they aren't really equal.

I only remember one time when Strange indeed defeated Dormammu, but it's not like Dormmy didn't one-shot him during the Defenders/Avengers War either.

I think he`s skyfather level but due to the nature of the character and the way that he is written he could be from anywhere to a 6 or 7.
