Like when making a battle, who could they fight or under what conditions could they fight, so that the battle isn't so much in their favor?
Is there ever a fair fight for telepaths?
Some characters have a level of immunity to telepathy. Like Gambit. He's shown the ability to keep high level Telepaths like Xavier out, but then again Pyslocke was able to read his thoughts (he most likely wasn't on guard at the time) but if a character has no defense against telepathy their pretty much screwed. Unless they can move faster then thought (Red Son Superman for example)

That's not actually true.
Most normal people can't. Some who have very strong will can and so can people trained to resist domination (or have had a lot of experience with telepathic powers).
Mentallo for example is a lowish level telepath who has problems with telepathic attacks. He has never learned how to screen out the thoughts of other telepaths or psychics. Psychic feedback can be painful to him, so he wears a special ESP-proof helmet to protect himself from psionic attack.

No. When Jean Grey fought Sabretooth she never even moved. She stood there with her arms crossed and simply owned him up and down.
