Does Invisible Woman have the potential to be a telepath, to use her psionic abilitys to do psionic mental attacks to the mind and read minds, she is immune with her force fields up, and i heard she can redirect mental psionic attacks with her psionic energies that was targeted to her back

To my understanding, Invisible Woman's powers have nothing to do with psionic power at all. She creates force field bubbles by manipulating air pressure. The Fantastic Four's powers correspond with the four elements: Earth (Thing), Fire (Human Torch), Water (Mr. Fantastic), and Air (Invisible Woman).
