How do volumes work with Moon Knight?

So I'm trying to read the 3 volumes of Moon Knight. So I have a question, they seem to be divded in 3 story arcs: The Bottom, Midnight Sun, and The Death of Marc Spector. Now as far as I can tell, when they start a new volume they start over from Issue #1 right? And how many issues do these volumes have? I want to know I've read all before moving on to the next. Then there's others like I have been hearing about Volume 2 being called fist of koshu something. Is that the same thing. Do some people call Volume 3 (From link below), volume 1 since it's kind of like a re-release?

P.S Also have been been hearing about volume 3.1

These are the series he's had. Some of them are mini-series. Some of them are collected and those collections are listed as volumes. The volumes that you listed are from the sixth series. The Death of Marc Spector is actually the fourth collection volume, not third.
