Can someone tell me the difference between normal issues and collected volumes? Are they the same or not?

Collected volumes are the grouping of several normal issues together into a single book.

@sinestro_gl: Do they include any bonus, like a miniseries or a graphical novel? Are the collected books divided into chapters or are they a straight read?

Unless you get a special edition, they generally don't have anything more than you would have normally have if you bought each issue separately...apart from the fact that you have the entire story in one book, there are no ads, and the the paper is generally of a better quality.

The separate chapters are also, generally, indicated.
