Depends which state Sauron is in. If we're talking a time when Gothmog the Balrog was still alive, then Sauron is far more powerful than LOTR films suggest. In those films he has transferred most of his power into the One Ring (and therefore in turn brought about his own downfall). I'm talking matter manipulation, mind control, magic and very powerful arts of persuasion as well as the ability to turn into a vampire, or the mightiest werewolf that ever walked.
Even when Huan (with the aid of Luthien) got a fatal hold on Saurons neck and killed his body, Sauron transformed into spirit form, then into a vampire, and ultimately escaped without serious harm. The only reason he eventually died was because of his mistake in putting the majority of his power in the One ring.
