The Wookies have the strength to tear off Storm Troopers limbs, putting them on Gorilla Lvls. Which is about 5,000 lbs or 2.5 tons. Shrek has shown the ability to lift trees from their roots which is required the same amount of strength. So Strength is a draw.

Chewy never speedblitzed in the movies but has been depicted doing so. Really whoever gets the first shot in wins.

Shrek is stronger but Chewie has more experiace better in H2H combat so Chewie got this

Chewbacca has better durability. He was shot several times by blasters set on kill before he was stunned, and just before his death he was standing upright against winds caused by a moon on a collision course with it's planet. He's got this.

This^^ and not to mention blows from a being that was casually chucking humans around like rag dolls had zero effect on him.
