Is Grimmjow really powerful enough to take down Sentry if he is at full power ?

It would be a close thing, but in his release form Grimmjow could have a shot.

Yeah... I feel ya. I aint too sure who wins here yet though... kind of leaning towards The Sentry though

The Sentry is very powerful. But he can harm him with his brute strength alone. As for the sword Grimmjow uses, he should be able to slice him apart if his blows ever landed.

The swords arn't actually metels. Hell, even Magneto wouldn't be able to control them because those swords are made of spiritual matter. Zaraki was able to slice a building with just a casual swing. And also, we really don't know there full strength (lifting wise) of these guys because it was never specified. So it could really be anything from 10 tones to 100.
