Without prep, it depends. Classic Doom was powerful without prep. I believe he took a shot from Cosmic beings. His armor was extremely powerful back in the day, and made Tony's current suit look like a wooden soldier.
With prep, Doom should win. Even in Dark Reign, Osborn implied that Doom, Reed Richards, and Tony Stark could bring him down if they had to (prep implied). The Void (and it was the Void at that moment) seemed to actually contemplate that comment. I think everybody fears Doom or Reed with prep. With prep, I think they could beat most people. Same probably goes with Tony, who might be surpassing Reed at some point.
This fight already took place in Mighty Avengers pre-SI. Sentry won. Current Doom with magic would probably win in the same way Morgana le Fey did in Dark Avengers.
It's how Iron Man captured Doom. Sentry got Doom in a bearhug, IIRC, and pwned him.
