@guttridgeb: Yes, they have morals. Think of it as a sort of spar between the two, but all three combatants are holding nothing back. They're all playing to win, they just won't go for the kill.
Also, just assume that if any of them are slain they "magically" come back to life at the end or somesuch.
Basically, they're all in character, not bloodlusted maniacs, but they're playing for keeps.
I give this to Koon and Fisto.
Fisto's unpredictable style should hamper Soresu, and Koon being there too won't help matters.

Shii-Cho is poor, and less effective against sole enemies.
But yeah.... Obi-Wan probably isn't winning. He could possibly last for more.... longer, than natural, with his mastery of Soresu, but otherwise, he probably wouldn't win.
@ShootingNova: In Cestus Deception (I think) Obi-Wan mentions that Fisto uses an incredibly unpredictable style, am i wrong?
@JamesKM716: Any form can be "unpredictable". Shii-Cho is the simplest, although as Kreia says it, "its simplicity is strength".
The duo take this. Kit himself has demonstrated skill on par with Obi-Wan when he demonstrated not inconsiderable superiority over General Grievous in “Lair of Grievous.” Obi-Wan, in comparison, struggles with the general until ROTS. Adding Koon tips a comparable fight in Kit’s favor.
