-This is EU (Grand Master) Luke Skywalker.  
-Random encounter. 
-Fight is to the death. 
-Fight takes place at an abandoned factory.

EU Luke is extremely fast, so I could see Apocalypse being speedblitzed. Or, Luke could use his Fold Space technique to BFR him into the sun.

I could see Luke winning this. 
 
As for the aforementioned speed, I would need some speed feats for Apocalypse. When he fought the Yuuzhan Vong, he appeared as if he had 10-20 lightsabers. Luke was quite fast.

It was said at the pinnacle of his power Luke was able to crush a star with the force, I'm not sure how he can possibly lose here.
