I'm.... not actually sure. Mostly because Ahsoka won't go for the kill/Gaara can't be knocked unconscious in round 1 due to Shukaku's influence. I mean, Ahsoka should win round 1 rather handily as a lightsaber is basically a godlike anti-weapon vs the rather immobile part 1 Gaara... but I don't actually think she'd put him down in character. Cut off a hand or two, but Gaara can still manipulate sand with his mind...

Round 2 is a colossal stomp in favor of Gaara. Heck, he could just fly upwards and kill everything on the ground in a mile radius. Plus, his sand resisted Raikage's Lightning Armor V2, so I'd say it'd slow down her saber enough to allow him to maneuver away in time in the off chance she could close the distance.

Does Ahsoka have any impressive TP feats?

Why wouldn't she rag doll him?

Sand powerful enough to one shot and then some

GAARA is a genius also

That's not how she fight.

She'd restore to it before dying.

Well it wouldn't help regardless with a character who doesn't need any actual movement to fight.

He'll have to move if he doesn't want to cut in half. he doesn't enough sand to do super kazekage mode stuff.

Gaara has an undeniable advantage, but the task question is can her lightsaber cut through his sand defenses? I honestly think it could, since lightsabers are hotter than your average, run of the mill lightning bolt.

Don't you think you're overselling Ahsoka a bit? I mean first off she isn't the most consistent user of the forces TK abilities and when she does use it, it's primarily just pushing action. Gaara can utilize his underground actions to restrict her movements, while using engaging her up front as a diversion.

Also He has a very large amount of sound already in his gourd about a couple tons of it and he can create Sand from rocks or buildings
