If Zom completely takes over the most recent Strange, Thanos would need help from Eternity, Dormammu, Umar, Ancient One and the Living Tribunal and another Sorcerer Supreme Dr. Strange (from another reality) to seal Zom away again. Not to also mention Nebulous and his Staff of Polar Power.
Zom can't die.... Ever... He's Eternal in essence unlike Thanos who can die even when immortal.
Eternal > Immortal
You have to seal away Zom, and since this is a fight to the death - Zom wins. And when Lady Death brings Thanos back, Thanos would need to seek out the help as previously stated above.
