Heh heh... Okay, here's how the fight will go: Doc Ock attempts to jab at Thing with the power to send a man's head around the world before that head could blink. But before it can conect, ol' Mr. Grimm grabs the mechanical tenticle out of the air, swings Ock around like a child shakes a doll, and brings him crashing down. Who's the winner? Gee, I don't know...
Naw. Despite the arms, Ben still dominates (he won't win only because he won't kill him); the only thing Adamantium arms means is that Ben can't break the arms per se. Doc Ock's body is still vulnerable, and I don't think that Doc Ock can strike with enough force to even knock him out, let alone kill him. Ben will reach his body eventually and knock him out with one finger.
I see this scenario going like this:
Ben grabs one of his arms, starts throwing him around like a rag doll, gets bored and BFRs him to the other side of Manhattan, then goes for a beer.
This would be a great battle that has potential to last a very long time. No doubt under real circumstances they wouldn't be able to incapacitate the other; with a long-lasting fight something always comes up like BFR, fleeing, or a third party, etc. This is why it's wise to set a context for your battle. I'll do it for my own benefit:
Mad Doc Ock has purged New York of all life (don't ask me how the guy did it, sheesh) including the Fantastic Four and apparently all other superhumans... apart from Ben.
I'd say Ben gets it done through sheer force of will and being the much more skilled fighter. I hate to downplay Doc like that but he is simply naturally a weaker brawler; just look at him - he's a fat nerd, not a gladiator. I give Ben 8 or 9/10 under circumstances (bloodlusted). If Ben is not bloodlusted, I'd give him 5, maybe 6/10, with his win or loss depending primarily on his endurance.

Doc Ock with adamantium tentacles was able to stomp Professor Hulk and Spider-Man at the same time.

@angrir: Those scans do make sense though. In the first two he has hulk restrained in the air so he can't get leverage (which doc ock states) that would allow him to grab an arm or two to throw the doc around, with the unbreakable arms beating on him and thrashing him around. In the third, hulk would've got him if it weren't for his shadow making doc aware of him. Now I wasn't even born when that comic was made so there could be some context being ignored but until proven, I say doc can win in a way similar to that.
Didn't Ock take on a small group of heroes with those arms that included the Thing? Been forever since I read the Revenge of the Sinister Six story line but I seem to remember him being the last man standing and swatting away a bunch of people in a group that included the Thing.
Definitely Doc. Thing can try as his heart out to get to Otto's fleshy body but he won't succeed. The arms are fast enough to dodge and counter Spiderman and Thing isn't nearly as fast as Peter. Otto whip around Ben like a ragdoll and Ben will have no chance of escaping. I'm not even 100% sure Doc Oc can't rip Ben apart limb from limb. The speed and dexterity of the arms would keep Ben away from the human part of this monster, the strength would pummel him to death or pull him apart, I don't know Doc is creative
