Zuko has kick large boulders out of the air and broken chains.
Zuko's strength feat is impressive but ultimately irrelevant since Sokka's sword has the striking strength to match if not surpass Zuko's strength through being able to chop down boulders, metal turrets, and steel platforms without any effort.
Overall Zuko has demonstrated much better Strength, Speed, and skill.
I will admit this won't be easy for Sokka, but I don't feel it will be a total cakewalk for Zuko either. While Zuko's speed and skills are great, Sokka was able to keep up with Master Piando who was pretty much the most skilled non bender in the entire series. While you could argue Piando was going easy on him, Sokka still could have been easily killed numerous times, and to be able to survive more than 2 minutes with him is impressive.
While he isn't as smart as Sokka he isn't unable to concoct plans and avoid traps. Due to the stat and skill gap Zuko will be able to pull off the fight.
But because Zuko tends to engage in all out brawls and mostly isn't at a disadvantage, Zuko has every reason to underestimate Sokka while it's the opposite for Sokka. Since Sokka knows Zuko's dangerous, he doesn't have to constantly engage in close quarter combat and can use the environment to his advantage.
Piando even admitted that it was primarily his creativity and ingenuity which impressed him, and is all Sokka needs to outlast Zuko.
What if Zuko cuts it out of the air?
It's a possibility, but even if Zuko does, I have confidence he won't be able to destroy it. Sokka's boomerang is sharp and isn't notably fragile. Sokka can eventually grab his boomerang again anyways.

I doubt he'd fall for that trick again.
Sokka doesn't necessarily have to attack him directly. While hiding behind a tree, Sokka can angle his boomerang to fly in a way which Zuko can't notice or hear until it's too late. Since Zuko and the others such as Mai and Ty Lee were unable to react or hear the boomerang from behind, Sokka should still be able to tag Zuko.
The eyes are blocked partially when wearing his mask.
Fair enough about Zuko's masks, but Sokka could still damage it at the very least.
Also Sokka isn't killing Zuko with morals on.
Sokka also has demonstrated no qualms over killing in the series.

While preparing for the battle on Sozin's Comet, Sokka chastises Aang for not killing Melon Lord and nonchalantly cuts off the melon's head as a example for Aang. This shows Sokka would have been desensitized enough to actually kill Ozai given the chance if he didn't feel it was Aang's destiny.

When encountering Azula at the Boiling Rock, Sokka outright went for a slash she ducked and another strike that missed by 2 inches away from Azula's face and he clearly had no issue trying to kill her if he could.
So in character Sokka should have no moral diliema over trying to kill Zuko if he has to in an all out fight.
