Vibranium's molecular structure behaves as if it is at absolute zero anyway iirc so cold's gun has no effect. Cold's gun is often misunderstood though.

I'd say the shield, as long as nothing else hit's it while at absolute zero... which I think I am right in saying is only the case while the gun is firing.

Also, since this isn't being done in vacuume or void, wont the cold gun just do it's normal thing an encase the shield in a block of ice from the water molecules in the air and a prolonged shot will just make the block bigger?
