I'm going with Sentry.

Ill take Sentry with the Void. The molecule manipulating power base would be too much for Apoc to contend with (as would most of his other powers sans Void but I digress)

Even without the Void, Sentry would stomp Apoc with ease.

You can't kill Apocalypse or KO him. Given his epic battle with High Evolutionary throwing everything he had at him, and Apocalypse laughing it off. I don't see Sentry/Void Winning.
