Emma's dad is such a vile, disgusting human being, but I've never seen anything bad happen to him. Is there at least a fan fiction out there somewhere where he gets killed or at least seriously hurt?

Hold on, better idea. How about you write a fan-fic about him dying so you can kill him in whatever twisted you want?

I can't think of a really creative way otherwise I'd write one. All I can think of on the spot is Emma returning to her dad, grabbing a knife, castrating him, then cutting his eyes with razor blades while he bleeds to death.
