Seriously why is he so inconsistent? There have been times when he destroys people in fights and shows excellent fighting skills. He has kicked Wolverines butt on multiple occasions and has beaten punisher. Then there has been times when he is beaten by losers who arent even that good or other times when he is beaten easily by people like Wolverine before. Whats this guys deal?

Wade Wilson is a former test subject of the Weapon X program, where he received his regenerative healing factor through the scientific experiments conducted upon him. A prominent enemy, ally and later, member of X-Force. He's famous for breaking the Fourth Wall.
Why is he so inconsistent
Horrible writing.
He's either shown fighting great character, or jobbing out to those same characters. Not DP's fault. Just inconsistent writing.
Because that's what he's meant to be, he isn't meant to be a serious character. Maybe one time in his history he was, but not any longer. He is just one long running joke.
Probably for two different reasons.....
1) Deadpool is an insanely difficult character to nail right. The only person to actually nail the character was Joe Kelly and every other writer has basically just been lacking in comparison. Christopher Priest (The writer who took on Deadpool after Joe Kelly) said it best, he said that Joe basically set the bar so high that it's impossible to live up to those expectations. So most writer don't try and instead just try to have fun with the character instead. Thus Deadpool goes from a being a dark mercenary to a loveable goofball almost instantly and back and forth. Some writers try to capture what Joe set and risk failing, other don't even try and just try to have fun.
2) Different times and different editors. We have to remember, back in the old days where Deadpool could take on and beat Wolverine in a fight, he wasn't as popular. He had a small cult following, but nothing as big as he has today. Most people didn't know about him, so he could get away with things like beating Wolverine in a fight. Now, he's under a huge watchful eye and has soared in popularity and that eye doesn't want a character like Deadpool beating any of the Marvel poster-boys.
Plus if Deadpool was to take on Wolverine in a fight, and win nowadays, all of the Wolverine fan-boys would throw a fit because he's now under the public eye and everyone would know about it. Back than, they could just dismiss it as something they never read from a character who was hardly a part of the Marvel continuity. Can't do that now. Deadpool is now a big part of the Marvel universe.
It's because he's a joke. A comic relief if you will.

"He's popular NOW we'll have him lose." If anything, HAVE him beat the poster boys. That way, it would establish him even higher. I enjoy fun Deadpool, but it pisses me off to no end that they won't have him win against anyone.

There's the big three. Spider-man, Wolverine, and Hulk. Those are Marvel's most popular, and most well known superheroes. Ask anyone in the world and odds are they know who those three are. Iron Man is working his way up there now too.
When Deadpool just had a small cult following, he beaten every single one of those three heroes at least once....twice for wolverine's case. Because the only people who read those stories, were a small cult following. Now that Deadpool is in the spot-light, they don't want him embarrassing their more marketable characters, cause than they lose their marketability. Nobody is going to purchase a Wolverine comic book now-a-days where the entire issue is just Deadpool schooling Wolverine, cause nobody likes to see their favorite character get schooled by another.
In short.....Because of Deadpool's popularity, there's now a higher risk of angering a larger number of fans if he beat them in a fight.
If Deadpool had beaten the Hulk again in a fight now, do you know how many Hulk fans would cry foul? All of them. But back than, he could do it and get away with it because the majority of people were unaware that he even did it in the first place.

Well to be fair, he wasn't really focused on beating Daredevil. He was more focused on killing that perverted shape-shifter dude. So the argument could be made that he wasn't into the fight.
He should be inconsistent. He's insane. If everything about him followed a pattern, he wouldn't be crazy.

Question for anyone. Did wolverine start losing/slash jobbing a lot when his popularity started to rise? I'm curious to know if that happens a lot.

A Daredevil fanboy insulting a Deadpool fanboy for defending his character.....so pretty much every argument ever.
Blame the writers for not doing their research.
Although, any bad performances could simply be swept under the rug as Deadpool just having his shits and giggles, kind of like "It was a Doombot" excuse.
Blame the editors for not doing their jobs. It is not a writers job to make sure that a character stays correct that is an editors job to find those mistakes and talk to the writer about it and change it. The writers job is to write of cause a writer should have the characters stay correct but his job is first of all to make a story. This is just one of the symptoms of to many comic book releases.
