We constantly see deadpool get parts of his brain turned into bloody goo. So how does he not lose his memories?

Cause his healing factor repairs the synapses, and nerve cells in the brain back to the previous point before injury. In the case of getting shot, his brain would be repaired right to the exact moment the bullet hit his skull. His memories and personality are part of those nerve cells and synapses so basically he just wakes up like nothing ever happened and finds himself spitting out a bullet after a few minutes.

Also, I'm posting this cause I can't think of anywhere else to put it.

so lets say the whole part of his brain that controls memories gets destroyed what then?

The human brain stores and creates memories in a part called the Hippocampus. If the Hippocampus is destroy, his healing factor simply repairs it to the previous state before it was destoryed. That's how his healing factor works. That's how, even though he loses a head he can regrow a new one and still remember how he lost that head. (Shown in the Evil Deadpool arc).

So if his hippocampus is destroyed, his healing factor would just repair it back to normal. Like it was never destroyed in the first place.
