If Gill-Man is the "missing link" between man and fish, and such a revolutionary find, why didn't they give him one of those fancy Latin species names?

Heck, the second movie was about them putting him in an aquarium and trying to study him. (By whacking him with an electric prod. Admit it, you wanted him to break out and kill them.)

S'okay. They never really call him that full title in-universe. They call him "the creature" a few times, but he's usually referred to as the Gill-Man.
